A Seasonal Summer

Wow, has half of the year flown by already? We have been here, there and everywhere over the past few months trying to get our cheese into the homes and mouths of many! We haven’t forgotten about you readers though, and we want to show you how you can use our cheese with this season’s produce. Summer is the best time for fresh, ripe produce and there’s nothing quite like pairing some of our most popular cheeses with these sensational fruits and veggies. We will make sure to keep up the blog once a month going forward and we’re so happy to be back here talking to our loyal customers! Now for the recipes…

Peas – these sweet little gems are an outstanding addition to so many dishes over summer and they have versatility to be used in both savory and sweet applications. Many of you have eaten and/or made pesto, the traditional Italian sauce using basil. When making pesto over summer, try substituting peas for basil and instead of parmesan, use our grated Black Butte Reserve. This is not to be missed. It has a delicate flavor from the peas and the BBR stands out with its grassy sharpness. Spread it on crostini or toss with a cold pasta salad.

Eggplant – These purple bulbs are a great canvas for a wide variety of flavors. Something fun to try during summer that will delight adults and kids is making eggplant pizzas. Slice the eggplant into rounds about ½ an inch thick and drizzle with olive oil, salt and pepper. Bake in the oven at 375 degrees for 10 minutes and remove to layer on sauce and cheese. Broil for another 5 minutes until cheese is melted, bubbly and browning. Our Garlic and Herb cheese is heavenly in this dish and compliments the other flavors perfectly.

Peaches and Corn –  A simple yet tasty salad to throw together during a summer get together is a beautiful salad using Bibb lettuce, sliced ripe peaches, kernels of sweet yellow corn and chunks of our mild, buttery Northern Gold. Add all ingredients to a bowl and finish with an easy champagne vinaigrette or a slightly creamy poppy seed dressing. Summer in a bowl!

Tomatoes and Basil – To taste some sunshine in your sandwich or wrap, tomatoes and basil make a wonderful seasonal component when combined with our Sweet Italian Red Pepper cheese. Take fresh tortilla and place some grilled chicken, basil, tomatoes and a generous helping of our sliced Sweet Italian Red Pepper cheese closer to one side of the tortilla. Fold sides in and then roll down until you have a great summer snack, ready to go.

Cherries and Figs – This one is great for a dinner party as the last course and pairs extremely well with wine. Roast some figs with a little bit of olive oil in a 400 degree oven with the cut side down for about 20 mins. Remove figs from the oven and allow to cool. Add the figs and some chopped cherries to a sauce pan with brown sugar, honey, lemon juice and thyme. Bring to a boil while stirring and then reduce by setting the heat to simmer for 1015 minutes. Remove from heat and allow to cool. Serve in ramekins with crackers and our Tartufello cheese sliced alongside.

Strawberries and Blueberries –  The marriage of flavors between strawberries and blueberries with a balsamic syrup reduction and our Peppercorn cheese is a real winner! For this dish, combine berries with cubed Peppercorn cheese and drizzle with balsamic syrup (boil balsamic vinegar with brown sugar and then simmer for 1015 minutes to reduce). Goes well with beef.

Any way you slice it, seasonal produce is the most flavorful. Paired with our handmade, 100 percent grassfed cheeses, your summer menu will be unbeatable.
