Today marks the beginning of our pairing posts where I’ll be describing our cheeses and then giving you an idea of the tastiest ways to enjoy them. First up, Northern Gold. This 100% grass-fed, raw milk cheese can be transformed in many ways. Because it has wonderful melting properties, cooking with it produces lovely results. The grass-fed flavor delivers a tanginess not found in other cheeses and it’s fun to play to that note with complimentary flavors.
Northern Gold Brunch Sandwich (best when served with your favorite full-bodied microbrew)
Enjoy this sandwich at brunch, or anytime, and you’ll experience how the perfect creamy tang of the cheese interacts in the best way with the rich egg yolk, smoky bacon, sweet strawberry jam and peppery arugula.
Ingredients: (one sandwich)
- 1 english muffin
- 2 slices of NG cheese
- 1 egg
- 1 tbsp of strawberry-bacon jam
- small handful of arugula greens
Start by crisping up some bacon in a pan until it can be crumbled easily. Lay onto a paper towel lined plate to soak up excess grease.
Begin to fry egg(s) in the remaining bacon fat in the pan. While eggs cook, toast english muffins in a toaster or toaster oven until golden and slightly crunchy.
Begin sauce in a seperate sauce pan by crumbling bacon and adding it in the pan with homemade or store-bought strawberry preserves. bring to a boil and then reduce and simmer for 5-10 minutes.
Melt sliced cheese onto muffins by finishing in the toaster oven or conventional oven until cheese is thin and settling into all the nooks and crannies of the muffin. Remove from the oven and promptly assemble by placing a tablespoon of jam on one side followed by the arugula and finally the egg. Savor open-faced or traditional.
