The Black Butte Reserve is made only during the spring when our grasses are green and lush. The intense flavors of the grasses influence the milk, which we then make into 20-pound wheels and age at least 6 months. This cheese won a gold medal for aged hard cheeses at the 2007 California State Fair. It’s great for heartier dishes such as risotto or sauces; it also makes a killer peach crisp!

Cheese is available by 1/2-lb. or 1-lb. hand-cut wedges OR quarter (5 lbs), half (10 lbs) or whole (20 lbs) wheels. All weights are approximate; we’ll do our best!

Our 2008 wheels are aging gracefully and will be released September 1! Pre-orders are suggested. :)
