Pedrozo Dairy and Cheese Co.

This cheese is named after Mandy’s very first cow, who quickly became the family pet and was allowed to freely roam the property. This two-pound “baby wheel” gives a bit of a younger flavor than its Northern Gold counterpart. It’s also mild and buttery, but is pressed lighter to give it a ‘fluffier’ texture. This versatile cheese will shred and melt; it also pairs well with nuts and fruits for a light cheese plate.
