3 mandarin oranges
6 cups baby arugula
1 red apple, cored and thinly sliced
2 tablespoons Extra Virgin Olive Oil (try Lucero!)
1 tablespoon lemon juice
1/4 teaspoon coarse salt
1/8 teaspoon freshly ground black pepper
1/2 cup (2 ounces) CA Farmstead Feta from Pedrozo Dairy and Cheese Co. (crumbled )
To Prepare
1. Zest the rind from 1 mandarin into a small bowl, set aside.
2. Peel all mandarins and section them. Do this over a bowl to catch the juices. Combine the arugula, apple slices, and mandarin segments in a large bowl.
3. Whisk the mandarin juice along with the lemon juice, salt, pepper, and mandarin zest. Pour over the salad and toss gently.
4. Plate the salad mix and sprinkle on the CA Farmstead Feta.
